
In the heart of the Mendoza's Hotel Intercontinental we can find the Olivas Restaurant, an atractive gastronomic option in charge of the well-known italian chef: Ennio Carota. It is a place that invites not only hotel guests but also people from Mendoza to summerge themselves in a world full of culinary sensations that will be hard to forget. Olivas is the only 5-star restaurant that offers a not so diverse menu, but one that cares for the value of the product offered. "We focus a lot on the raw products. They have to be locally productive, fresh and from the season offered, thats why the menu may change over the year. In winter the menu has more calories but in summer less, of course taking into account the avialable products in that time of the year" explained the italian chef.
The concept is to respect always the process of the product: "In the case of the fresh pasta, we make it ourselves. We cook it in the moment is order, as it should be always done. We do the same with the Rissotto. We distiguish ourselves from the rest for the excelente of our raw products and the way we cook them".
"Our restaurant has menu thought for a local public that preffers generous portions. The relation quality-price is very interesting, every cost is related with what is eaten and the client realize that our preparation of the dishes is very delicate" asured Ennio.
For selecting the entrace dish, lots of options are provided, from seafood, vegetables, fishes, stiff plates, empanadas from Mendoza served in a very original way (with tomato sauce), even to fresh pasta (meat agnelottis with butter and sage, ricotta ñoquis and seafood spagettis).
Eating becames a party with main dishes that Olivas offers: milanesa cabrese (its like "napolitana" but more elegant, accompanied by goat cheese and roasted tomatos), meat chops with bone included with mushroom sauce, goat cooked in a wooden oven (this dish is normally calls the client attention). "Another great option is the pork shoulder cooked in low temperatures with light barbecue sauce" explained passionate chef.
The desserts satisfy all tastes: chocolate, ice cream, fruit salad. "We have the fullfill the needs from the hotes guest by offering standard food, as well what the mendoza's public wants: something that they dont normally eat at home" noted by Carola.
The resaurant has a quite interesting amount of wines available from well-known wineries and also from some boutiques.
